COCONUT – The Oil of Life
Good Fats Fats are classified as short, medium or long chain, based on the number of carbon molecules they contain. Nearly two-thirds of the saturated fat in coconut oil consists of medium-chain fatty acids (MCFA). It is the chain length that is fundamental to the health properties of Coconut Oil and distinguishes it from other saturated and unsaturated oils. The length of the carbon chain is a key factor in the way dietary fat is digested and metabolized and how it affects the body. MCFA’s do not circulate in the bloodstream like other fats, but are sent to the liver where they are immediately converted to energy. So the body uses the fat in coconut oil to produce energy, rather than be stored as body fat. MCFA’s found in coconut oil speed up the body’s metabolism burning more calories & promoting weight loss. By adding Coconut to your diet your body will perform better because it has more energy and greater endurance. Immune System Enhancer Lauric acid is a medium chain fatty acid, which is abundant in Coconut Oil and considered responsible for many of its health benefits. Coconut Oil is about 50% lauric acid. The only other abundant source found in nature is in human breast milk. Lauric acid converts to the fatty acid Monolaurin in the body. Monolaurin is an anti-biotic, anti-fungal, and anti-viral agent. It is known to dissolve the ‘lipid envelope’ that protects many pathogenic viruses and bacteria. Examples include HIV, measles, vesticular stomatitis virus (VSV), herpes simplex virus (HSV-1), Influenza – Pneumono and Rubeola.
Coconut Oil was the subject of a massive negative publicity campaign by Multi-national vegetable oil companies in the USA who wanted to capture this oils niche. Coconut Oil is solid at room temperature. To emulate this property for making spreadable margarines they ‘hydrogenated’ their oils creating false or ‘trans’ fatty acids which our bodies do not know how to handle. Thus, not all vegetable oils are natural. Many are extracted with chemical solvent and are highly processed, refined and modified. For centuries Coconut Oil has been used by traditional healers in India (Ayurveda) and the South Pacific for massage to soothe and cool the body. It has been used to alleviate symptoms of eczema, and other milder skin ailments such as nappy rash. Because the skin absorbs it quickly, it does not leave you feeling sticky. It is also well regarded as a hair oil.
Coconut Oil, can be easily incorporated into the diet by using it sauté vegetables, as a salad dressing with lemon juice and as an additive to hot cereals and soups. It can also be added to smoothies and combines well with fresh fruit. Coconut Oil has always been regarded as a good fat for baking. We recommend substituting it directly for other oils and butter or trying a 50:50 coconut oil to butter mix.
Managing Virgin Coconut Oil Coconut Oil is a clear or slightly cloudy liquid at room temperatures above 26degreesC. As it cools it forms white ‘pearls’ and starts to solidify. Below 22degreesC it is a snow-white liquid. If the oil is solid, place the container in warm water to melt.
