Book Review:  Safe Options   by Louise Pase

A Cookbook offering Healthy Alternatives for children, allergy sufferers, coeliacs and busy people.  
This is not a book to make people feel guilty or to say who is right or wrong, but a book of facts, ideas and recipes to help people make healthier choices, while feeling that they are “not missing out”, as so many people would have you believe.
These recipes are aimed at busy people, especially ones with children, to be able to quickly throw a dish together and feel confident that everyone is getting a sufficient amount of vitamins and minerals.
What Louise has tried to do in this cookbook is to, along with making healthy meals, snacks & desserts without any chemicals, colourings or additives (That everyone will enjoy), is to make them easy, fun and most of all time saving wherever possible.  She is constantly getting the impression that many people would like to change their diets, eat healthier foods and help their children to obtain the essential vitamins and minerals that their growing bodies desperately need, but they just don’t know where to start.

The good news is, after you’ve read this, you will!

One of the main reasons Louuise decided to put this book together was because she was always being asked –
How do you make that? 
Where do you buy the ingredients? 
How do you get your kids to eat it? 
And why are your children always so healthy?

Healthy living is very easy, especially with all the wonderful products I’ve included in this book.  You don’t have to change overnight, in fact, a gradual change seems to work much better for the long term, as you are more likely to stick to it.  Of course the easiest way to get children to eat a healthy, junk free diet is to start them off that way, as babies!
Don’t get that ridiculous notion in your head that they are missing out because they are not having toxic filled lollies, chocolates, ice-creams, fast foods etc.  I’m sure that they are not going to say they missed out when, they have beautiful skin, glowing eyes, shining hair, fantastic firm bodies that are full of life and vitality and if managed properly, free of disease.  Missed out, with all that, who are they kidding!  The kids that I feel sorry for are the ones that were not offered the opportunity to have a healthy lifestyle.  The ones that will end up with the all too common problems that we see in society today, and ones that are accepted as “normal”, such as Eczema, Asthma, Allergies, Constipation, Acne, Nausea, Headaches, Obesity, Period Problems (which by the way are not “normal”), there are many more that end up leading to life threatening diseases.
In a world that is becoming as demanding and as fast paced as ours, we really need to be in the best physical & mental health that we possibly can be, just to cope with the pressures of everyday living!

Wonder Whey

Throughout this book you will notice she does not use cows milk as such, but a fantastic whey powder instead. If you have been unfortunate enough to have tried a less superior whey formula than the one put out by Wonder Foods, then you are probably saying to yourself "yuck - whey milk!". "I know because I had the same experience before I tried Wonder Whey!" says Louise.

Being unable to drink cows milk she had been looking for an alternative long before the kids came along. She had tried soy milk and it just didn't appeal; and also found many of them contained sugar in one form or another and of course there was the scare over genetically engineered beans as well. So the search was on, it was not so much a nutritional thing for at first as it was the longing for a nice cold smoothie that didn't leave that mucous filled feeling in one's throat, or a creamy ice-cream without the rich side effects and of course the busy times when the quickest way to have a meal was to drink it! She thought all hope of this happening was lost and then one day a friend asked her to try a glass of Wonder Whey. I couldn't believe the delicious flavour! No mucous, no bloated feeling, there were no side effects, fantastic, hence, have never looked back


On the top of all that, the literature she read explaining the nutritional benefits and how they were so much more superior than cows milk left her wishing someone had told her about this sooner. "I am so fortunate to have known it during my pregnancies though, as mixed up as a protein drink, (the recipe is on page 97), I knew I was getting a power packed meal in a glass that would be doing the world of good for my baby and myself. Along with a healthy diet, EnerGfood, Vitamin C, Colloidal Minerals and a protein drink everyday, I had no need for Vitamin pills, Iron tablets or potions to deliver beautiful 8.5 to 10lb babies. Now my children drink this too and love it. They have never had a glass of cows milk and I have to tell you they very rarely have a cold, if they do, they are over it quickly, without all the runny noses, congested chests, throat infections and ear aches that are so common in children today. Is there a connection? I'm not here to say, but I can tell you, I'll be sticking to the Wonder Whey!"

Here are some details on the Natural Whey Drink so you can have a better understanding of the product:

  • Wonder Whey is the serum of the milk after cheese is enzymatically produced
  • therefore becomes a semi pre-digested food
  • only the concentrated solids of the whey are used
  • the animal fat is removed by osmosis
  • It is 16% dry weight Protein, mainly in the form of Lactoalbumin (found in mother's milk and the highly digestible milk of small farm mammals, such as goats and sheep)

Natural Whey Drink was developed by a leading food technology company in the early 1980's to achieve a particular objective to provide the community with a product alternative (high in protein) without Cholesterol and with a low allergy potential. What came out of that research was a delicious tasting product with a higher "Protein efficiency ration" than milk or soy; a pure product with

  • NO YEAST
  • NO ANTICAKING AGENTS
  • NO CHEMICAL WHITENERS

Natural Whey Drink contains a matrix of vegetable gum firbres used to 'smooth' the formula, that has proven to be very nutritious as a food for the digestive lining (healing and building the villi in the intestine). At that time some other companies were making whey based products using a cheap gum called carageen ("a possible gut irritant which may be carcinogenic").

A decision was made to a add a broad spectrum of natural multi-vitamins and minerals, so that Natural Whey Drink could meet the requirements of a whole food or formula dietary food. Normally, the pure whey protein concentrate ingredient is a little bitter, so Wonder Foods have used a small percentage of corn syrup solids (dextrose) for the purpose of removing the slightly bitter taste, but not making it ultra sweet. The 'added fat' was derived from coconut which is known to act as a substitute for the taste and flavour of milk fat. This form of fat has NO CHOLESTEROL and has a reputation as an inhibitor of fungus in the gut.

The release of carbohydrate and sugars is effected slowly due to the vegetable fibre gum. This helps to prevent Hypoglycaemia (low blood sugar) and Hyperglycaemia (high blood sugar) reactions to the product.

Wonder Whey is high in the minerals Potassium and Magnesium. It contains only around one third of the calcium of milk, but due to the supporting nutrients the calcium is better utilised especially in bone replacement. The Calcium combines with Orotic Acid (known as Vitamin B13) to effect a positive benefit on the bone. This benefit is not found in milk. The Potassium acts as an intestinal broom for mucous, thus helping to improve respiration by preventing mucous migrating to the Respiratory tract.

The faster digesting time makes it a good food for Athletes and those engaged in heavy work. It is also helpful in maintaining the body's electrolyte balance during strenuous exercise or due to heat stress.

Wonder Whey stores in a dry cool place for up to two years, and is therefore a wonderful survival and reserve food. Wonder Whey may be used in

  • cooking
  • baking
  • sauces
  • soups
  • gravies
  • desserts
  • scrambled eggs .... etc

Use it in powder form or mix in a small quantity of hot or cold water to make up to the required amount. 200gram or 2 cups of powder mixes in an instant to make two litres, which will keep refrigerated for 4 - 5 days.

ORGANIC shopping

Organic shops and home delivery services are popping up all over the place. It is said to be one of the fastest frowing industries of the New Millennium!

  People, I think have become increasingly aware of the importance of good quality food and the massive damage the commercially grown and sprayed produce has reeked on our communities. Not only that, in this fast paced we live, it's nice to be able to step back a bit and go back in time, where, an apple really tasted like an apple and you could smell the sweetness of a peach before you even tasted it and there was no need to remove the skin off everything before eating for fear of what toxic residue you may be consuming. The demand is showing that people want change, they want the "real thing", before it's too late, before our children & grandchildren never get to experience what real food tastes like!

 

The idea is to look for organic produce whenever possible. Look for markets in your district where you can purchase a wide range of organic items including fruit, vegetables, meat etc. Look also for bakery items such as sour dough breads, yeast free pies, sugar and dairy free biscuits & cakes, wheat & gluten free pizzas (just to name a few). Find those bakeries that use organically produced grains - such as Spelt, Rye, Oats, Rice, Corn, Amaranth - especially where special dietary needs are important. Spelt is the most popular bread sold at organic bakeries. It is higher in protein and fibre than Wheat, is very water soluble and breaks down in the system faster than any other grain, ideal for people with allergies.

Look for organic flours (of grains as listed above) and have a go at making your own bakery items. Bread makers are readily obtained, and it is so easy.

DID YOU KNOW.... that 99% of all bread and pastries we eat are made with rancid (stale) flour. Some organic bakeries use the old fashioned Celtic baking method where the flour is milled on the premises and used straight away, insuring the flour is fresh and rancid free. No Yeast, Baking Soda, Dairy, Sugar, Oil, Chemicals, Additives or Artificial Colourings are used in the baking of the bread products.

One of the best kept secrets about Sour Dough bread is that it creates a peristaltic action in the intestine, (this is a wave like action which expands & contracts) and helps us to better assimilate and digest our food and also to eliminate it.

You may well have an organic shop in your area, if so, whenver possible buy organically as there is just no comparison to the commercially produced goods, especially when it comes to flavour but more importantly Vitamin & Mineral content.
